You know, I found myself wondering, if an Atari 2600 emulator would be possible…

It might be possible, but it would be hard work though.
The Atari 2600 was one of those retro consoles that had hardware sprites and an odd graphics processor.
If the 6507 is similar to the 6502 then the CPU itself wouldn’t be much of an issue.

I’ve actually looked at emulating an Atari 2600.

And you are right: it’s hard work. Surprisingly hard.

Although the 2600 is a “simple” machine w/regards to amount of memory etc, it is also a “analog” device, that is deeply coupled to the workings of CRT timings (cathode ray tube). The problem of emulating an Atari 2600 is to be able to emulate the interaction of the 2600 and the TV.

The Atari 2600 is much harder to emulate than for example the NES.
